On Wednesday, March 20 at 8 p.m, State Senator Troy Singleton shares a recipe he inherited from his godmother, “Pork Chops Lucanian Style.” Here’s the make-it-yourself takeaway!
Pork Chops Lucanian Style Recipe
2 pork chops
Salt and pepper
1 yellow onion
6 cloves of garlic, 2 ground into a paste, 4 chopped
9 ounces of peppers pickled in vinegar
1 cup white wine
1 pound of strozzapreti or other rustic pasta
Ground two garlic cloves into a paste. Add a bit of olive oil and salt and pepper.
Rub both sides of the pork chops with the paste.
Sauté the pork chops in some olive oil for 4 to 6 minutes (depending on their thickness) on each side.
Chop two cloves of garlic, the onion, and the peppers.
Remove the pork chops from the pan and add the vegetables.
Sauté the vegetables until the onions are translucent.
Add the white wine and let it cook off.
Reintroduce the pork chops and cook them for another 2 or 3 minutes on each side.
While all this is going on, sauté the remaining two chopped cloves of garlic in olive oil.
Boil the pasta according to the instructions on the package.
Mix the pasta with the olive oil and garlic.
Serve the pork chops and onions on top of the pasta.
