Ginger Spaghetti with Vin Gopal

On Wednesday, March 6 at 8 p.m, New Jersey Senator Gopal joins in to prepare one of Nick’s favorite pasta dishes, ginger spaghetti. Here’s the make-it-yourself takeaway! Note that this meal requires four to five hours advance preparation to let the sauce simmer.

Ginger Spaghetti Recipe


1 pound spaghetti
3 ounces butter
1 medium sized piece of ginger
5 cloves garlic
3 28-ounce cans of whole peeled plum tomatoes
5 sprigs basil
5 sprigs parsley
two Parmesano Reggiano rinds
1 pound fresh mozzarella
Grated Parmesano Reggiano cheese


Mince the garlic and the ginger.
Chop the parsley. Reserve some for garnish at the end.
Tear the basil leaves by hand.

In an extra large pot, cook the garlic, ginger, basil, and parsley in the butter until soft.
Add the tomatoes.
Add the rinds.
Salt and pepper to taste.
Cook for four or five hours.

Cook the pasta according to the directions on the box.
Cut the mozzarella into small pieces.

While both are hot, add the pasta to the tomato sauce in the extra large pot.
Add the mozzarella and mix vigorously to melt the cheese.

Serve in bowls and sprinkle with parsley and grated Parmesano-Reggiano.
